Cook pasta faster

Pasta will start cooking long before water reaches 212 degrees if you add the two together right away. You’ll need:

A frying/saute pan, 1-2 quarts water, pasta and kosher salt (1 tablespoon or so).

Add the pasta and the cold water to the pan and turn on the heat. Add salt.

Stir the pasta some while it’s cooking. Water in a wide, shallow pan comes to a boil pretty quick, so don’t run away.

Taste pasta to see when it’s done. It won’t take long because you aren’t waiting for the water to boil before you add the pasta.

Save the starch-filled leftover water as a thickener and binder for sauces.
