Restaurateur’s dreams come true

The slogan at the new Flamentco’s The Place American Eatery says it all: “We’re pretty sure you haven’t tried your favorite pizza.”

Brittany Flament and her fellow co-owners are very confident and proud of their new eatery in O’Fallon. She recently invited business writer Will Buss to “The Place” to learn more about their American dream that has come true:

Q: How has this restaurant become a dream come true for you?

A: “We really just want people to know that it’s an American eatery, and we’re everyday people. We’re American dreamers, and we had a dream and we kept on pushing. We had run into tons of obstacles to get this place open. And having faith and just pursuing our dream made it become a reality. And it’s just awesome. It’s fast-paced, and we love it. And we love the responses that the community gives us.”

Q: How have customers responded?

A: “We’ve been open four weeks, and we sold out two Fridays in a row. Everyone loves it. They say they’ve never tasted anything like it, and we strive to provide the best. If it’s not right, we’ll make it right. And we love our customers. They’re very supportive; they’re very understanding; and we’re just excited to be able to live here locally in O’Fallon and operate our business out of O’Fallon, the same community that we raise our kids in and plan to stay in.”

Q: What do you offer customers?

A: “What we offer here is made with in-house ingredients. We make our dough fresh every couple of days. We offer fresh toppings, real ingredients and real sausage, so you can get the best flavors possible. We offer the 16-inch pies, as we called them on the east coast. It’s the only size you can get here, during lunch hours, from 11 a.m. to 2 p.m., you can get them by the slice. It’s $2 for pepperoni or cheese. We are open Tuesday through Saturday from 11 a.m. to 8 p.m.”

Q: Is it all carryout service?

A: “It’s carryout for now. We do have plans in upcoming months to possibly do some changes or renovations to offer and accommodate seating.”

Q: Who are the other owners?

A: “It’s myself, my husband (Cory Flament) and my sister-in-law (Bianca Flament), all of whom love to eat food and make great food. We enjoy watching people take that first bite and say, ‘Mmm, that’s some good stuff,’ or ‘I’ve never tasted anything like that,’ and knowing that we actually created that. My husband and I have been waiting to open for nine years. We were always looking and thinking, oh, wouldn’t it be great to open a pizzeria and do things our way and just offer what we sit down and present our family.”

Q: Had you worked in a restaurant before?

A: “Actually, my husband ran a pizzeria at a young age in upstate New York. He kind of took over things and just had a real passion for it. When we got married, that’s how our house ran. We cook everything from scratch. We cook large meals to share. We give it to the neighbors or whatever. Everybody was like, ‘Oh my gosh, it is so good. I’ve never had anything like it.’ After all of the positive reviews, we felt we needed to get something open.”

Q: What is your background?

A: “I actually was in the bank industry for a while. But I’m hands on at home, and he is part of the military (navy in St. Louis), and cooking large meals and offering it to the sailors is what we did.”

Q: What is on the menu?

A: “We have pizza, pasta, wings and salads.”

Q: What is the most popular item among your customers?

A: “The most popular is our Carnivore pizza, which is like a ‘meat lovers,’ which has four different types of meat of it. We also have ‘The Jungle,’ which is meat and veggie pizza. We also have ‘Britt’s Blazin’ Buffalo,’ which is, of course, named after me. I’m a Buffalo wing fanatic and I’ve created this pizza that is amazing. The flavors just blend well together.”
