BLUEBERRY CRUMBLE BREAKFAST BARS
1 1/4 cup of flour
1 stick butter, softened

1 lemon for zest and juice
1 teaspoon vanilla
3/4 cups brown sugar
1 bag (11 ounces) granola cereal
1 jar (10 ounces) blackberry jam
16 ounces blueberries (fresh or frozen)
3 tablespoon cornstarch
1/4 cup honey or brown sugar
Preheat oven to 350 degrees.
In a large bowl or stand mixer, beat together flour, butter, egg, lemon zest and brown sugar until smooth. Add granola and mix well. Press 3/4 of the mixture into the bottom of a 9-by-13 parchment-lined baking dish.
In a large bowl, stir together jam, blueberries, cornstarch, honey and lemon juice from one lemon. Spread this mixture on top of the granola.
Sprinkle remaining granola mixture across the top.
Bake for 40-45 minutes, or until the edges begin to turn a light golden brown. Cool completely before slicing.
Tip: Place warm pan in fridge to expedite cooling.
