A menu with variety and delish margaritas. Check out this new southwest IL restaurant
If you haven’t heard, Agavero Grill & Cantina is open for business.
The new Mexican restaurant, located at the former site of Ruby Tuesday in Collinsville, opened earlier this month.
But don’t assume that this is another Mexican restaurant just like all the others. The menu has a lot to offer with many items not often seen at other area restaurants.
Options include chilaquiles, costillas en salsa verde (pork ribs in green sauce), paella and authentic dishes like pozole verde, pozole rojo, carne en su jugo.
The menu also offers a variety of vegetarian dishes (drop the dairy for vegan-friendly options).
And the margaritas are delish, too.
Anyone who remembers the decor and atmosphere of Ruby Tuesday will immediately notice the difference at Agavero. The interior is brighter and welcoming to customers and offers plenty of seating.

Agavero Grill & Cantina is located at 604 N. Bluff Road, Collinsville. Regular hours are 11 a.m. to 9:30 p.m. Monday-Thursday, 11 a.m. to 10:30 p.m. Friday-Saturday and 11 a.m. to 9 p.m. Sunday. Dine-in and carryout options are available.
