Madison County gets a new cookie shop, and it’s open this weekend. What’s on the menu
Alibi Cookies opened this month at 200 S. Buchanan St. in Edwardsville and offers cookies, cookies, more cookies and other sweet treats.
Cookies on the menu include oatmeal raisin, peanut butter chip, sugar, red velvet, double chocolate chip and multiple others.
Alibi also offers iced cookies, ice cream, cookie cakes, shakes and cookie sandwiches.
Alibi Cookies was founded in 2020 by Mike Evans in the kitchen at Pilgrim Congregational Church in St. Louis, according to the business’ website.
The St. Louis-based business started as a way for Evans to share his love of cookies.
The business started as a vending machine operation. The machines, known as “CookieBots,” distribute various flavors of warm, individually-wrapped cookies.
Evans told Sauce magazine in fall 2020 that he got the idea from a Facebook video.
“In Japan, you can get almost anything you want in vending machines,” stated Evans in the article.
He told Feast Magazine in January that when he saw the Japanese vending machines, he thought, “What if I put cookies in a vending machine that could keep them warm?”
He brought the idea to St. Louis, starting with a CookieBot inside Tamm Avenue Bar in Dogtown.
“I just think there’s nothing else like it. People walk up [to the cookiebot], and they see this giant white machine, and they’re like, ‘Holy crap, what is that? Warm cookies?’” Evans said in the Sauce article.
Today, Alibi Cookies has CookieBots at its three brick and mortar locations in Missouri: Dogtown in St. Louis, St. Charles and Jefferson City.
The Edwardsville store is the fourth location.
