New sushi restaurant in downtown Belleville sets opening date

I have an update about downtown Belleville’s newest restaurant, Chaos Sushi Bar & Grill.

The eatery, which will offer sushi, ramen and pub food, opens Thursday, June 6, immediately after a grand opening ribbon-cutting ceremony at 3 p.m.

Owner Mike Riede called to let me know he was having a soft opening and tasting event for his staff and invited me to stop by.

Some of the changes since my previous visit included the removal of the exterior Lexi’s signs. The new Chaos sign will be installed just before the grand opening.

The sushi counter, constructed by Brian Orr, an old friend of Riede’s, was also installed since my last visit. Riede said new tables will arrive before the opening.

The employees put in a lot of time and effort to get the place ready for business and deserved a bit of a reward, he said. So following a staff meeting, food was provided.

“They work hard, and they care about this place,” he said, adding that he enjoys being in their company and feels that their opinions matter.

“It’s this group’s restaurant. They’re the ones doing all the hard work,” said Riede.

Unfortunately, I was unable to partake in the delicious-looking foods – not when I’m on the clock, you know – I did get a glimpse of the good-looking eats.

I admit, it was really hard to see some of those sushi rolls, made by chef Christian Morrow, pass me by, knowing I couldn’t have any at the time.

Tuna rolls, veggie rolls, pizzas, tempura, and even a horseshoe, beautifully presented, were served as I stood with Riede near the serving window.

The menu is still being finalized by Riede’s business partner, Cheyne Carroll. But based on what I’ve seen so far, folks are in for a real treat.

Riede said that the chefs take enormous pride in their craft and have the freedom to express their culinary creativity. He believes that people will be pleased with their offerings.

Chef Adam Holik handles the pub fare, making everything from scratch, according to Riede. It’s not your usual “pub food.” It’s better.

While the official menu selection will be small, ordering off menu and requesting substitutions are definitely options, according to Morrow.

I definitely have to go back when they open.

Chaos Sushi Bar & Grill is located at 126 E. Main St. in downtown Belleville. The restaurant opens Thursday, June 6, after the 3 p.m. ribbon-cutting event.
