Restaurant will offer ‘home-style flavor’ at former Chevys in O’Fallon
The former site of Chevys Fresh Mex in O’Fallon will soon be occupied by another restaurant.
Don Chuy’s Fresh Mex & Cantina will soon open at the Central Park Drive site, said Greg Anderson, community development director for O’Fallon.
The tenant is in the middle of an interior demo and renovation, said Anderson. The outside has been painted and other exterior work was also complete.
Plans initially were for the restaurant to open in May or June, said Anderson, but there were delays. But the place really started to come together these last four months, he said, and will make a great addition to the area.
An opening date has not been set for the new O’Fallon restaurant.
What will you find on the menu at Don Chuy’s?
Don Chuy’s offers “the home-style flavor of traditional Mexican cooking” and is described on the website as offering fare “from traditional favorites to modern twists, every dish is made with love — and served with daily specials the whole family will enjoy.”
The menu lists many options containing steak, chicken and seafood, from appetizers, soups and salads to tacos, enchiladas, fajitas and many other entrées. Several burgers are also on the menu.
Dishes featured on the Don Chuy’s website include:
- Steak and Lobster: A 12-oz. Ribeye with 60-oz. Lobster cooked with garlic butter;
- Revolution: Steak burger with pineapple, bacon, caramelized onions and cheese served with fries;
- La Costa Bowl: Boiled seafood, crab legs, shrimp, crawfish, potatoes and corn;
- Pulpo Zarandeado: Octopus cooked on a charcoal grill, marinated with their traditional Zarandeado sauce with rice and salad;
- Steak a la Mexicana: T-bone steak topped with peppers, onions, tomato, shrimp and served with rice, beans, tortillas and salad;
- Salmon Mango: An 8-oz. salmon cooked on a charcoal grill, marinated with special mango sauce, served on a bed of spinach avocado, pico mango and rice;
- Tostada Ceviche: Their traditional tostada that can be served with octopus, shrimp or a mix;
- Camarones Zarandeados: Shrimp marinated in their traditional Zarandeado sauce and cooked on a charcoal grill;
- Empanada de Ribeye: Three mini empanadas stuffed with mozzarella cheese and picadillo ribeye;
- Burrito Michoacano: Burrito stuffed with carnitas and rice, topped with cheese dip, pice de gallo and chorizo.
About Don Chuy’s Fresh Mex & Cantina
Chevys Fresh Mex closed in March 2024 after operating in O’Fallon for 26 years. The closure came after the restaurant and the property owner were unable to reach a lease agreement.
Don Chuy’s Fresh Mex & Cantina is located at 1305 Central Park Drive in O’Fallon. Two restaurants are currently in operation in Lee’s Summit, Missouri, and Overland Park, Kansas. They are owned by Jesus “Chuy” Leon.
