Fill and roll pancakes with fruit for a little extra something at a weekend breakfast.

Here's a recipe that serves as a sweet dessert or an easy-to-make breakfast. This simple recipe only requires four ingredients and is ready to eat in less than 10 minutes. The kids will love it, or if you’ll a new cook, you’ll impress your guests.

Plus, you can switch out the filling and use apple, blueberry, even a mixture of Nutella and chopped nuts.

PANCAKE ROLL-UPS

1 cup pancake mix

1 cup milk

1 tablespoon butter, melted

1 can cherry or other fruit filling

Beat pancake mix, butter and milk in a large bowl. In a skillet over medium heat, pour 1/4 cup batter and wait for the edges to brown. Flip the pancake, and continue to cook until the edges brown. Remove from heat and repeat until all pancake batter has been used. Spoon the cherry filling into the pancake and gently roll up. Secure with a toothpick if necessary. Makes 5 servings.

Note: Put the oven on about 200 degrees and keep them warm and covered as you work the griddle or pan.

Also, feel free to use your favorite pancake batter, but make it a little thin and the pancakes big so they’ll be easier to fill and roll up.
