A new restaurant opens soon at former Ramon’s El Dorado site in Collinsville
Last June, Rafael Torres opened La Fiesta Mexican Restaurant in Belleville at the former site of Mariachi’s.
Now, Torres and his team will repeat history, this time in Collinsville, when La Fiesta 2 Mexican Restaurant opens at the former site of Ramon’s El Dorado.
An opening date hasn’t been confirmed, but Torres said this week that if everything goes well during the final preparations, they are looking at an early March opening.
Preparing to open was a lot of work, both inside and outside the building, he said, adding that they’re taking their time to do it right.

Torres has three other restaurants: La Fiesta Mexican Restaurant at 400 S. Illinois St. and Mi Casa Mexican Restaurant at 4311 W. Main St., both in Belleville, and Viva La Fiesta Mexican Restaurant at 1027 Century Drive in Edwardsville.
Details of the new menu aren’t yet available, but the offerings at La Fiesta 2 will be different and the menu bigger than those of the other restaurants, he said.
