Recipe of the Day: Fast, healthy chocolate-chip cookies
4-INGREDIENT BANANA CHOCOLATE-CHIP COOKIES
2 medium ripe bananas
1 cup unsweetened shredded coconut
1/2 cup whole oats
1/4 cup mini chocolate chips or chopped walnuts
Preheat the oven to 350 degrees. Add bananas, coconut and oats to the bowl of a food processor. Process until the bananas are completely mashed and the mixture is combined.
Stir in chocolate chips or walnuts. Spoon tablespoon-sized pieces of dough onto a parchment-lined baking sheet. Bake 20 to 25 minutes, until the tops are golden.
Makes about 15 (1-inch) cookies.
