Delicious recipes give graduates a chance to eat their hat, diploma
Get-togethers to celebrate a graduation need a little fun, a little whimsy on the buffet table. These two recipes are easy to make and will garner some grins as a guests pop Graduation Caps in their mouths or put a couple Diploma Rollups on their plates.
Graduation Caps
24 miniature peanut butter cups
1 tube (6 ounces) decorating frosting in color of your choice
24 After Eight thin mints or chocolate squares
24 milk M&Ms in school color
Twizzlers, optional
Remove paper liners from peanut butter cups; place upside down on waxed paper. Place a small amount of frosting on each peanut butter cup; center a mint or square of chocolate on each.
Using frosting, make a loop for each cap’s tassel or take a Twizzler and cut thin strands. Place an M&M on top of each tassel and secure with frosting if using Twizzler strand. Yield: 2 dozen.

Diploma Rollups
6-inch flour tortillas
2 cups prepared ham, tuna or chicken salad, or thinly sliced deli ham, turkey or beef
Cream cheese (plain or flavored) or shredded cheese
Colored ribbon or thin ribbons of green onion stalks
Spread cream cheese on a tortilla, then add a rounded tablespoonful of salad or some deli meat. Or, add meat/salad and then shredded cheese. Gently roll up. Trim rounded edges of the tortilla, or cut in half and trim to make 2 smaller rollups. Tie with a green onion ribbon or a ribbon the color of your graduate’s school.
