St. Louis-based Schlafly Beer opens its first Illinois brewpub this week
Schlafly Highland Square, Schlafly’s fourth brewpub and its first in Illinois, opens Wednesday, according to a press release from the St. Louis brewer.
A grand opening event will be held Sunday, Dec. 26, which is also Schlafly Beer’s 30th anniversary, the release stated. A ceremonial ribbon cutting will take place at noon.
Schlafly Beer’s founders Tom Schlafly and Dan Kopman and founding brewer Stephen Hale will be in attendance.
Schlafly Highland Square is located in a 71-year-old building that once housed the Highland Chamber of Commerce. The building was renovated and expanded to 3,420 square feet and includes a new kitchen.
The building now “incorporates a small experimental pilot brewery upstairs,” said the release, adding that many of the building’s historical design elements have been preserved.
“For the better part of a year, we have been planning and revitalizing this building to open our first brewpub in Illinois. The City of Highland has been an exceptional partner, and we’re looking forward to bringing the Schlafly experience to residents and guests,” CEO Fran Caradonna said in a statement.
“It’s serendipitous that the opening of Schlafly Highland Square takes place so close to our company’s 30th Anniversary.”
The restaurant seats 80 people. A three-season patio can accommodate an additional 80 guests.
Schlafly Highland Square will offer fare representative of Schlafly’s signature menu items. The location will also provide 14 Schlafly beer styles on draft, as well as the Highland Lager, brewed exclusively for the new location.
A retail area will also feature Schlafly merchandise, special releases, packaged beer and more.
Schlafly Beer and the City of Highland formally announced the development of the Highland brewpub earlier this year.
Schlafly Highland Square is located at 907 Main Street in Highland. Hours are 11 a.m. to 9 p.m. Monday, Wednesday and Thursday, 11 a.m. to 10 p.m. Friday-Saturday and 11 a.m. to 8 p.m. Sunday. They are closed on Tuesday.
