Metro-east restaurant owner opens his fourth at familiar Collinsville location
La Fiesta 2 Mexican Restaurant opened Tuesday at the former Ramon’s El Dorado in Collinsville.
The new restaurant is the second owner Rafael Torres has opened in the last year. La Fiesta Mexican Restaurant opened at 400 S. Illinois St. in Belleville last June.
When asked how he feels about opening two locations within a year, he replied, “Happy, but super busy.”
It will be the last restaurant he opens for now so he can focus on the new one.
In addition to the two La Fiesta locations, Torres also owns Mi Casa in Belleville and Viva La Fiesta in Edwardsville.
The menu at La Fiesta 2 includes options similar to those at his other restaurants, but offers more items, including Tex-Mex options, burgers and more authentic Mexican dishes.
Examples include the pambazo, a traditional Mexican sandwich made with bread dipped in red guajillo sauce and filled with papas con chorizo, sour cream, lettuce, queso fresco and green sauce; sopes, handmade corn tortillas topped with refried beans, a choice of meat, lettuce, tomatoes, sour cream and crumbled cheese; gorditas; and empanadas.
There is also an expanded drinks menu with more margaritas, mezcalitas, micheladas (Mexican beer cocktails) and specialty cocktails.
There will be a short wait for adult beverages, as the liquor license is still pending.
