Belleville restaurant to close; owners say reopening ‘isn’t in the books’

A downtown Belleville restaurant and bar announced this week that it will soon close.

Cheyne Carroll, co-owner of Chaos Sushi Bar & Grill, shared on the business’ social media that the restaurant’s last day will be May 3. The restaurant will be closed for at least the summer.

“Belleville’s CHAOS needs to take a bit of a break,” he wrote.

“This means consolidation and a time of reflection as we decide what is next for us. With both Mike and I out for the moment, we have decided to take a step back. We felt a building pressure on our team, things were getting a bit too chaotic with the workings of a restaurant and the 150-year-old building, and there are/were too many unknown variables to continue moving forward without the constant worry/stress for our employees and ourselves.”

Co-owner Mike Riede has been absent from the business since suffering a “medium to severe ischemic stroke” in late February, Carroll posted on social media in March.

Since then, he has shared updates on Riede’s recovery. The latest post said Riede would go home this week after spending time at a rehabilitation facility.

Beyond a summer closure, the restaurant’s future is uncertain. Carroll, who was not available for an interview, wrote that while he hopes to reopen, the reality is it “just isn’t in the books for us anymore.”

“If we come back, it will be after careful consideration of all things.”

About Chaos Sushi Bar & Grill

Chaos Sushi Bar & Grill opened in June 2024. Riede acquired the property from Brandon McGraw, who owned The Quarter Restaurant, a New Orleans-themed eatery that later became Lexi’s Bar, Food & Fun.

Riede, wanting to open a sushi restaurant when Seven closed, approached McGraw about buying the restaurant. He bought the building in April 2024 and closed Lexi’s a few weeks later to begin renovations.

Chaos serves a menu that includes sushi, ramen, and tempura, as well as bar food offerings of smashburgers, wings and salads.

Specialty cocktails are also popular, and the establishment’s bar manager, Carmanecia Whitehead, was a winner in a recent BND reader poll for favorite downtown Belleville bartender.

Chaos Sushi Bar & Grill is located at 126 E. Main St. in Belleville. Hours currently vary. The doors open at 11 a.m. every day except Monday, and the kitchen closes around 8:30 to 9 p.m. For more information, call 618-416-1000.
